Lemon Roast Chicken

Serves: 4 - 6
Ingredients
  • 1.7 kg chicken
  • 1 lemon
  • olive oil
  • salt
  • pepper
Directions

Place 2 halved lemons in the cavity of a 1.7kg chicken and secure the legs with kitchen string.

Brush the chicken with olive oil and sprinkle with salt and pepper.

Place on a rack in a roasting dish and cook in a preheated 190°C oven for 65 minutes or until cooked through and golden.
